Little Lemongrass Mojito

INGREDIENTS (YIELDS 2 COCKTAILS)

  • 2 lemongrass stalks, extra pieces for garnish

  • Big handful of mint (about 15 mint leaves), plus 2 sprigs for garnish

  • 8 basil leaves, chopped

  • 2 teaspoons Truvia Natural Sweetener or sugar (whatever makes your heart happy)

  • 2 oz  fresh lime juice, plus 2 slices for garnish

  • 4 oz tablespoons white rum

  • crushed ice

  • ½ cup sparkling water, more as needed

  • *Remove alcohol for Mocktail option)

INSTRUCTIONS

​

  1. Hopefully you have made a trip to your local grocery store and found some fresh lemongrass to use in this balanced, herbal, and fresh cocktail. 

  2.  You will cut off the pale root end of the lemongrass and the tough upper stem of the stalk. Next, peel off the outer layers until you are left with the most tender part of the lemon grass. 

  3. With washed hands, clap the lemongrass leaves in your hand to start releasing its oil and aromatic properties. (Make sure to do the same for the mint as well)

  4. Then use a knife to finely chop. 

  5. In a cocktail shaker, combine the chopped lemongrass, mint leaves, basil and sugar. Muddle ingredients and add the lime juice, rum and a handful of ice. Shake well.

  6. Prepare 2 glasses with ice. Strain the cocktail mixture into the glasses, adding a small spoonful of the muddled herbs for extra herbal blast. 

  7. Top with sparkling water and garnish each glass with a sprig of mint and a 4-inch piece of the lemongrass stalk.
